Traditional Green Chile Sauce

This is a traditional sauce made in homes throughout New Mexico for generations.

2 Tbsp. vegetable oil
1 Tbsp. unbleached flour
½ medium onion, chopped
1 clove garlic, minced
1 lb. pork, cubed

1 tsp. BUENO® Granulated Garlic
1 tsp. salt
1 13 oz. container BUENO® Frozen
     Autumn
Roast® Green Chile
2 cups water


1. Heat 1 Tbsp. oil in saucepan over low heat.
2. Add onion and minced garlic. Cook until transparent.
3. Add pork and seasonings. Brown pork over medium heat.
4. Stir in green chile and water. Bring to a boil.
5. In a separate skillet, heat 1 Tbsp. oil over low heat. Add flour to make a roux.
6. Stir roux until golden brown. Add to sauce.
7. Cover and simmer over low heat 10 to 15 minutes.
     Makes approximately 1 ½ quarts.
