Natillas (Custard)

Aunt Cleo had this recipe perfected. Often indulged in during Lent.

1 ½ cups milk
½ cup sugar
1 Tbsp. unbleached flour
½ tsp. salt

2 egg yolks
1 Tbsp. milk
½ tsp. vanilla
3 egg whites
¼ tsp. ground cinnamon


1. Bring 1 ½ cups milk to a boil.
2. In a small bowl, combine sugar, flour, salt, egg yolks and 1 Tbsp. milk. Stir until
    smooth.
3. Add sugar mixture to boiled milk. Cook over medium heat 10 minutes, stirring
    constantly.
4. Remove from heat. Mix in vanilla.
5. In a chilled serving bowl, beat egg whites until stiff. Pour liquid mixture into egg
    whites and gently fold together.
6. Sprinkle cinnamon on top. Refrigerate. Best when served chilled.
     Makes six 4 oz. servings.
