Chile Colorado (Red Chile Sauce) 

If you don’t wish to go through the hassle and mess of using pods for a traditional sauce, use this recipe along with Bueno's puree for a taste of home.   Pour over traditional fare: enchiladas, tamales, burritos and posole or give your food a Southwestern flavor: pour over eggs, fish, pork or any type of meat.

2 Tbsp. vegetable oil
2 Tbsp. unbleached flour
1 14 oz. container BUENO® Frozen Red Chile
¼ tsp. BUENO® Oregano, crushed.

2 cups water
3 cloves garlic, finely minced
1 tsp. salt
¼ tsp. sugar


1. Heat oil over low heat. Add flour. Stir constantly to make a golden brown roux.
2. Add red chile puree and remaining ingredients.
3. Bring to a slow boil.
4. Simmer uncovered over low heat for 30 minutes. Makes approximately 24 oz.
