Roasted Pork Loin Medallions
In a New Mexican Green Chile, Pear, & Clove Sauce

Shopping List
• 1 large yellow onion, French sliced
• 4 pears, peeled, cored and diced
• 1 Tbsp. olive oil
• 2 Tbsp. brandy
• 3 Tbsp. brown sugar
• 1/2 tsp. salt
• 1 pinch ground cloves
• 1-13 oz. container BUENO® Autumn Chopped Green Chile
• 2 cups reduced sodium chicken broth
• 1 Tbsp. butter
• dash of salt & pepper
• 6 boneless pork loin chops (6 oz. each)

Preparation
1. Prepare onions and pears.
2. Heat 1/2 tablespoon oil in a large pot over medium heat.
3. Caramelize onions until golden. Add pears. Vigorously stir in brandy to loosen the stuck vegetable matter.
4. Stir in brown sugar, salt and ground cloves to coat evenly.
5. Add in green chile and stock. Simmer over low heat until sauce is at a desired consistency.
6. For added richness, stir in butter. Check and adjust seasonings.
7. Heat 1/2 tablespoon oil in pan over high heat. Season pork loin medallions with salt and pepper. Sear pork loin on both sides or until done (center is white and internal emperature is 140º).
8. Serve with sauce.

Yield: 6-6oz. servings
