"At Orlando's Italian Restaurant we currently use the Bueno Frozen Hot Green Chilies, packed 6/56 ounce plastic tubs, which we purchase from Sysco Foods.
It has been so long since we switched to Bueno's green chilies that I have no record of the exact date, but I think it was well over 15 years ago. I do recall like it was yesterday where I first ate them-it was at a Watson Foods show at the Lubbock convention center. At the time were using canned whole green chilies and stringing them out by hand into strips onto pizzas and our Italian Roast Beef Sandwich. The canned green chiles were light green and mushy and sort of slimy. We never thought about using them on anything else.
When we switched from the canned green chilies to Bueno's frozen green chilies, it was an amazing transformation for our menu-the taste was 1000% better.
I also recall eating at a friend's house several years later and tasting her green chile stew. It was so good, I thought about how we still just used the Bueno® green chilies on pizzas and the roast beef sandwich. We'd not expanded it to any other menu item. The next day I went to Orlando's and worked on a new dish with one of my partners, Jerol Fanta. In about fifteen minutes we came up with a recipe for what we call Green Chile Chicken Linguine, which is now our best selling specialty dish!
We also use the green chilies in our best selling appetizer, Mafia Queso and in our best selling soup, which is Potato Green Chile Soup.
The Green Chile Chicken Linguine, the Potato Green Chile soup, and the Mafia Queso have become signature items for us, and have achieved almost cult status with the locals.
When we opened the Caprock Café in 1997, we used the Bueno® green chilies in the Pecos Queso there, as well as in the same Potato Green Chile Soup that Orlando's serves, which is the only soup we serve there, and a Tex-Mex dish, Green Chile Chicken Enchiladas.
We also use Bueno® Green Chilies in our Green Chile Sauce, and we serve a Chicken Fried Steak and a Chicken Fried Chicken topped with this green chile sauce instead of white gravy.
So you can see that once we figured out a few new uses for the Bueno® Green Chilies, it has been nothing but good sales for us!
We have never tried any other brand of green chilies since switching to Bueno®, as the consistency and flavor are now such a part of our recipes and signature taste that switching would likely result in a lot of angry customers!
I would recommend Bueno® Green Chilies to any operator who wants to add a blast of New Mexico heat and flavor to their menu."
