We start with premium whole kernel corn, cook and steep it slowly over half a day for maximum flavor and function (this is 100% nixtamal). We take no shortcuts in order to retain the best that tradition has to offer. The corn is then ground into a masa, formed and baked. Depending on the tortilla's intended use (table use, rolling, frying, frying for chips), our manufacturing methods and formulations are customized for maximum functionality.
